For those nights you don't have a lot of time to fix dinner, try this easy crockpot chicken recipe! With a little planning ahead, you can have a tasty dinner on the table in no time! Recipe submitted by Lindsay Gentis.
Crockpot Fiesta Chicken
Ingredients:
3 to 4 thawed chicken breasts, boneless and skinless
1 can black beans, drained and rinsed
1 can corn, drained
1 can Rotel tomatoes
1 block (8 oz) cream cheese
1 dry packet Hidden Valley Fiesta Ranch dressing
Directions:
Put all ingredients except the cream cheese in a slow cooker and cook on low for 5-6 hours or until the chicken shreds easily with a fork. Shred all the chicken and put it back in the crockpot. Place the clock of cream cheese on top, cover and let it soften and melt for about 30 minutes, then stir everything together. Serve over rice, on tortillas, or with tortilla chips.
