Ingredients: ½ cup all-purpose flour ½ cup white sugar 1 tsp salt 1 tsp pumpkin pie spice ¾ tsp baking powder ½ tsp baking soda ½ tsp cinnamon ½ tsp nutmeg 1 ¼ cup pumpkin puree ½ cup milk 2 eggs ¼ cup maple syrup ¾ cup quick cooking oats
Preheat oven to 375 degrees. Spray 6 muffin cups with cooking spray. Whisk dry ingredients in a large bowl until combined. Stir pumpkin puree, milk, eggs, and maple syrup into the dry ingredients until batter is smooth. Fold in oats. Scoop batter into muffin cups and bake 20-30 minutes.

Ingredients:
2 medium carrots, sliced
2 celery ribs, chopped
1/2 cup chopped onion
2 tablespoons butter
4 cans (15-1/2 ounces each) great northern beans, rinsed and drained
4 cups chicken broth
2 cups cubed fully cooked ham
1 teaspoon chili powder
1/2 teaspoon minced garlic
1/4 teaspoon pepper
1 bay leaf
In a large saucepan, sauté the carrots, celery and onion in butter until tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cook for 15 minutes or until heated through. Discard bay leaf.
